Caesar salad is notoriously known for its cheesy, garlicky, and creamy dressing that blankets leafy, watery greens. What it is not known for is its nutritional attributes. Traditional caesar salad dressing contains anchovies, raw egg yolk, and parm - tasty, but not necessarily virtuous. For a vegan and healthified version, I made a few swaps and modifications to add nutrient density to a classic dish without sacrificing palatability and mass appeal.

The are many reasons why sweet potatoes are rock star tubers. They are versatile, vibrant in color, and pack a serious nutritional punch. Their flexibility is highlighted in this dish, serving as an edible bowl for spicy and flavorful beans. These stuffed spuds could be a great dish at a causal dinner party with a few options of fillings and garnishes to suit your guests taste preferences. Whole roasted sweet potatoes are also a great item to have on hand. Squash can be utilized in many ways. For this recipe, I took roasted butternut squash and garlic and blended them together to create a simple, nutritious, and delicious spread. The ingredients and process are minimal, but the end result is quite robust. The squash is simply served-spread on toasted whole grain nut and seed bread, garnished with chives or pomegranate seeds. Use it as a dip with baked whole grain or corn tortilla chips and vegetables or in place of mayo or hummus on your next sandwich.

It comes in various shapes and sizes and can work well when paired with accessories like paprika or caramelized onion. For a warming fall soup, I melded roasted vitamin A and C rich squash with caramelized onion and pear for a nutrient rich and colorful dish - the perfect way to continue to embrace fall essentials. The soup pairs well with a simple green salad or is hearty enough to enjoy alone. Play up the garnishes with some fresh dill, spiced yogurt, or toasted nuts.

This recipe was initially featured on Refinery29, but I wanted it to find a home here, on The Crunchy Radish. Zesty, flavorful, and antioxidant- rich, this carrot ginger soup makes for a lovely light and nourishing "clean" meal. The topping of the poppers makes the soup more hearty and fills a void where heavy and calorically dense croutons or bread typically lie.

I am constantly on the hunt for the perfect veggie burger. I've had multiple failed attempts in which the flavors are not right or the patties don't hold up. Through trial and error and my current obsession with sweet potatoes, the quinoa, kale, and sweet potato patty was born. The longer the patties have to chill, the better they hold up to searing. Alternatively, you could bake them, but they will likely dry out a bit. I served the patties in a lettuce wrap with sliced radish and a lemon yogurt sauce. If you want a vegan alternative, use tahini in place of yogurt for a nuttier diary-free sauce.
