gluten-free pumpkin pancakes

September 22, 2015 Miranda Hammer

For some, the start of autumn means chunky sweaters, ankle boots, and colorful leaves, but for others, like myself, it means pumpkin. Sure you can have your "pumpkin" latte or pumpkin doughnut, but why settle for the not-so-good-for-you stuff when you can have a flavorful and nourishing breakfast instead? These pumpkin pancakes are the ideal way to kick off your fall weekend or to leisurely nibble on during a lazy Sunday - sans sugar high or artificial gunk.

warm bulgur wheat salad with broccoli rabe + roasted lemons + za'atar tomatoes

September 16, 2015 Miranda Hammer

Robust and pleasantly bitter, broccoli rabe is one of my "go-to" tender and crunchy vegetables. This brassiceae holds up well as a simple side dish when sautéed with garlic, chili flakes, and olive oil or as a pleasant addition to grain salads. In this recipe, the broccoli rabe is cut with sweet roasted cherry tomatoes, roasted garlic dressing, and zesty roasted lemon. Hot, cold, side dish, or main, this grain salad is sure to be a crowd pleaser.

a very crunchy radish wedding: one year later

September 10, 2015 Miranda Hammer

It has taken me a year to finally share our wedding here on Crunchy Radish and our one year anniversary seemed like the perfect time to do so. A part of the delay had to do with the post-wedding blues - yes they really do exist, and I struggled for some time to be able to look back and reflect on the special day. The rest of it had to do with the desire or lack there of to share the intimacy of our celebration and carefully tread the line of private vs shared. I hope our pictures bring you inspiration and a smile, as they now do for me. Check out the full story in the Lifestyle Section of Crunchy Radish.

August 31, 2015 Miranda Hammer

I am a huge breakfast lover. I often find myself contemplating my morning meal while slowly drifting off to sleep. You may not be as breakfast obsessed as I am, yet there are a multitude of reasons why you should be. Eating breakfast boosts your metabolism, improves focus, prevents overeating at lunch and dinner, and helps to promote a healthy, happy weight. The start of the school year is the perfect time to initiate breakfast habits that will stay with you year round. Even if you are not heading to class or do not have a little one to prep for, September is the ideal time to integrate healthy and simple rituals into your daily life.

six snacks to pack for your next flight

August 25, 2015 Miranda Hammer

I am all about snacking mindfully. Snacking not only keeps the hangry beast at bay, it stabilizes blood sugar, optimizes your metabolism, and prevents overeating. Travel should not be an excuse to let your clean and conscious eating habits go by the wayside. Sure, I am all for a vacation indulgence or two, but it should be worth it and not because you did not set yourself up for success. Airport and airplane food are notoriously unhealthy and laden with preservatives, sodium, and sugar. But why get stuck in a bind? Here are six snacks which are travel-appropriate and will leave you looking and feeling great by the time you reach your destination.

late summer slow roasted tomato + eggplant pasta

August 20, 2015 Miranda Hammer

I am not going to lie; this is probably one of the best pastas that I have ever made. It is incredibly easy and highlights the beautiful produce which is peaking on the east coast right now. The only catch is that it takes time....approximately 4 hours of your precious end of summer time. Don't despair. I have a trick to make this seamless, simple, clean, and delicious dish yours without the elongated wait.
