A comforting bowl of soup is what I immediately crave when the seasonal chill starts to set in. Using an immersion blender or high speed blender is the perfect way to achieve creamy soup without dairy or butter. Additionally, the squash has a good amount of body and starch which allows for a creamy and decadent texture sans the cream. In my continual quest to optimize nutritional value in my food, I added immune boosting ginger and curry powder to the soup base.

It is full on squash season. If you love squash as much as I do, that means you are likely buying them by the armload at your greenmarket or grocery store. I am a sucker for simply roasted squash tossed into a salad or blitzed into a soup. If the #bowllife is more your thing, then this veg-filled crunch fest is the perfect way to enjoy your nutrient-rich fall bounty.

The September 2018 issue of Bon Appetit Magazine features a chopped salad from San Francisco restaurant, Che Fico. The image alone sold me, but so did the layers of flavors from all the ingredients - honey roasted squash, seared brussels sprouts, bitter radicchio, marinated chickpeas, salty olives, and cheese all tossed with a peppy Italian dressing. The multi-step process to recreate this salad was definitely something I was not sold on. I love the idea of this hearty salad as a main, but don’t love the multiple steps required to make it. I set out to build a better version that did not take two plus hours, still tasted amazing, and shaved some of butter and the cheese from the original recipe.

If the fact that I am almost at black status at Sweetgreen is any indication of my affinity for the chain, then I don't know what is. During my most recent harvest bowl order (hold the chicken, add chickpeas and spicy broc), I realized that I probably should attempt to make this at home. The ingredients are simple enough to meal prep and are in line with what's in season for fall. Sure, nothing will beat the convenience of popping into my local SG, but at least I can attempt to save some cash and build the bowl at home.

This has been a busy summer for me filled with some amazing travel, fun work opportunities, and prepping for the incoming addition of #babyradish. I also had the incredible opportunity to attend the cooking school at the Golden Door Spa and Resort outside Escondido, California in early August for some personal development paired with a little R and R. The few days that I spent at the Golden Door allowed me some major relaxation partnered with my favorite past time - cooking!

Even the best intentioned individuals, like myself, tend to overdo it on Thanksgiving. In case you did, use today to get back on track. Head out for a power walk or a run or sign up for your favorite workout class. Give away the desserts and not so healthy sides, and hang tight to the veggies that you can repurpose and enjoy heathfully over the next few days.

My husband and I moved into our new apartment a few days ago. Leaving a home - regardless of the time spent there is always bittersweet. Mourning the loss of the memories that existed and the warmth that was created seem to linger over the excitement of a new space and a new neighborhood. This is the fourth move for us and, every time we do it, we leave our old home dragging our feet. Months later, once routines are established and kinks are worked out, we wonder what was all the fuss?
