DIY smørrebrød bar for a sweet and simple self-serve brunch

A toast or smørrebrød bar is a way to not only serve items that can be prepped in advance, but allows an interactive element for your guests. Most hosts want to keep guests out of the kitchen, but with a smørrebrød bar, your brunch attendees are encourage to get involved.

Even the best intentioned individuals, like myself, tend to overdo it on Thanksgiving. In case you did, use today to get back on track. Head out for a power walk or a run or sign up for your favorite workout class. Give away the desserts and not so healthy sides, and hang tight to the veggies that you can repurpose and enjoy heathfully over the next few days.

your new avocado toast: shroom boom

Unlike the Radish, I have never been a huge fan of mushrooms, but this toast has me second-guessing everything I thought I knew. It hits all the right notes with all the right flavors. Beet greens complement the chanterelles nicely and gives you a wonderful way to utilize all those greens - especially once all the beets start rolling in from your CSA or greenmarket runs.  For too long I chucked my beet greens in the trash because I had no idea what to do with them.  Now I am beet-green-guilt-free. I keep them around and use them as I would any other dark leafy green.  Beet greens are rich in vitamins A, C, and K and are not as bitter as some other leafy greens. Sorry Kale.

some things are better on toast

Some things are just better on toast. Avocado mash, chocolate hazelnut spread, ricotta and honey to name a few, but this pea and mint pesto just may take the cake. Fresh or thawed peas, mint, and lemon shine in this perfect-for-spring pesto. For all of you non-bread people out there, this pesto works wonders with crudités, quinoa, whole grain pasta, dolloped over salads or served on top roasted vegetables.

It’s not vacation, it’s a trip! So much caffeine, so many tomatoes,  so many smiles (and some tears- mainly from me) and a lot of happy memories.

Love @smittenkitchen roasted tomatoes and beans. I’ve been making them weekly. Added kale cooked down in bean broth to make them extra extra. Used @rancho_gordo corona beans in your honor @taliack
A few good things that I ate this week.

Good day for dilly bean stew with cabbage and frizzled onions. Love this vinegary, buttery, creamy combo. Used limas cooked from dried and it was extra extra. Recipe from @alisoneroman stay cozy friends.
Hitting all the right spots on a cold snowy day. @jj__mc mushroom and wild rice soup with potatoes and dill. Swapped sour cream in place of heavy cream and really leaned into all the Eastern European vibes in this recipe. Warm and cozy. Recipe from #
