what's for christmas morning? pizza frittata and shiitake bacon!

In search of a Christmas breakfast that you can prep in advance and feed a crowd? Consider simple baked eggs that taste and smell like pizza! To keep this dish festive, roasted tomatoes and sautéd kale serve as the main components to highlight the colors of the season. Don’t like either? Swap in spinach or swiss chard for kale and roasted peppers in place of tomatoes. The cheese in the baked eggs is also adaptable to taste preference and availability. I highly recommend using a combination of a sharp cheese, like cheddar or fontina, with a mild creamy cheese like mozzarella. Serve the eggs with a simple salad, berries, toast, and shiitake bacon and you’ve got a simple and delicious holiday breakfast!

This bowl is perfect anytime of day, yet I especially love to get in my greens first thing. Meal prep is an essential tool for anyone looking to eat healthily and to save money while managing a busy lifestyle. It is a key component that I always stress when counseling clients. While juggling culinary school at the Natural Gourmet Institute for Health and Culinary Arts, maintaining Crunchy Radish, and working on some exciting new projects, I have been leaning more and more on meal prep as my foundation for keeping healthy and well balanced. To help curate some upcoming posts on meal prep, I called on my very good friend, culinary producer at the Rachael Ray show, and all star meal prep-er, Jeanette Donnarumma, for her tips and recipes on meal prepping. First up, breakfast!

The decision to eat animal protein is a personal choice. If you do, it is essential to be a conscious consumer - not only to think about where your protein is sourced, from a humane perspective, but also for health purposes. Selecting animal protein that has not been injected with hormones, antibiotics, or given feed rich with genetically modified organisms are all essential to consider in addition to the quality of the animal's life. Ultimately, what has entered into the animal's body will enter yours.

my favorite way to eat a breakfast taco

Breakfast is extremely important to us here at Crunchy Radish. I often find myself contemplating what I will have for brekky the night before. A nutritious breakfast provides an exponential amount of benefits including much needed fuel for the morning. Breakfast prevents overeating at lunch, helps avoid poor food choices out of hunger, improves mood, and assists with weight maintenance and weight loss. Still not a convert? Try out my favorite way to eat a breakfast taco loaded with fiber, complex carbohydrates, protein, and a hearty dose of greens.

It’s not vacation, it’s a trip! So much caffeine, so many tomatoes,  so many smiles (and some tears- mainly from me) and a lot of happy memories.

Good day for dilly bean stew with cabbage and frizzled onions. Love this vinegary, buttery, creamy combo. Used limas cooked from dried and it was extra extra. Recipe from @alisoneroman stay cozy friends.
Hitting all the right spots on a cold snowy day. @jj__mc mushroom and wild rice soup with potatoes and dill. Swapped sour cream in place of heavy cream and really leaned into all the Eastern European vibes in this recipe. Warm and cozy. Recipe from #
