If you don't eat meat, no need to miss out on the taco party. I've got a recipe for spicy and flavorful cauliflower tacos that will fit in perfectly with your Cinco de Mayo festivities or any taco Tuesday.

back to school breakfast - breakfast tacos with cilantro jalapeño yogurt sauce

Around here, tacos are welcomed at every meal, but nothing beats starting your day with a toasted tortilla filled with scrambled eggs, greens, creamy avocado, crunchy radish, and a slightly spicy sauce. This breakfast includes all the key players - protein, fiber, healthy fat, plus some extra nutritional mileage from dark leafy greens. If this seems too ambitious for your typical weekday morning, save it for the weekend or prep your greens, sauce, and garnishes the night before. Then all you have to do in the morning is toast your tortilla and scramble your eggs.

tacos don't wait for tuesday's: millet + butternut squash and kale tacos

Tacos are my ideal vehicle for vegetables, layered with sauce and a hint of spice. They are completely adjustable, depending on the season or with whatever leftover veggies you may have on hand. Millet and kale tacos with cashew cream are anytime of day tacos. If you are an "eat your vegetables" morning, noon, or night kind of person like me, then these can serve as a great breakfast loaded with whole grains, protein, and of course, veggies. Or, if you prefer to reserve your vegetable intake after noon, then dish these up for a quick and nourishing lunch or dinner.

I teamed up with my friends at Whole Foods Market NYC to bring you The Crunchy Radish Cinco Series, a healthier take on a festive holiday. 

The stars must have been aligned this year because Cinco de Mayo falls on Taco Tuesday! Yes, you read that right, vegheads. To celebrate this momentous occasion, we here at Crunchy Radish went the veggie route - no surprises there. In order to get our fiesta on, we created a taco that is both simple and satisfying. It's the ideal way to say olé on your next taco day.

my favorite way to eat a breakfast taco

Breakfast is extremely important to us here at Crunchy Radish. I often find myself contemplating what I will have for brekky the night before. A nutritious breakfast provides an exponential amount of benefits including much needed fuel for the morning. Breakfast prevents overeating at lunch, helps avoid poor food choices out of hunger, improves mood, and assists with weight maintenance and weight loss. Still not a convert? Try out my favorite way to eat a breakfast taco loaded with fiber, complex carbohydrates, protein, and a hearty dose of greens.

It’s not vacation, it’s a trip! So much caffeine, so many tomatoes,  so many smiles (and some tears- mainly from me) and a lot of happy memories.

Hitting all the right spots on a cold snowy day. @jj__mc mushroom and wild rice soup with potatoes and dill. Swapped sour cream in place of heavy cream and really leaned into all the Eastern European vibes in this recipe. Warm and cozy. Recipe from #
