If you are like me, you love any excuse to eat tacos. They are the perfect vehicle for combining your favorite protein, something crunchy, some avocado, and, of course, salsa. If you don't eat meat, no need to miss out on the taco party. I've got a recipe for spicy and flavorful cauliflower tacos that will fit in perfectly with your Cinco de Mayo festivities or any taco Tuesday.

Did Someone Say Lentil? Smokey Lentil and Kale Soup to Fix your Winter Rut

This month is all about manifesting my insatiable love for soup. Not only are soups typically forgiving and flexible, they can be quite amenable to augmentation if you happen to run out of a particular spice or herb. A hearty soup or stew can be repurposed for multiple meals throughout the week, alleviating much of the 8pm, just home from work/gym, grab a bag of blue corn chips hangry drama. For my take on lentil soup, I enriched the flavors with smoked paprika, spicy chili powder, and warm and earthy cumin to add a distinct robustness to this hearty winter soup. A handful of baby kale is added right before eating for added nutrient density and a burst of color.

It’s not vacation, it’s a trip! So much caffeine, so many tomatoes,  so many smiles (and some tears- mainly from me) and a lot of happy memories.

Hitting all the right spots on a cold snowy day. @jj__mc mushroom and wild rice soup with potatoes and dill. Swapped sour cream in place of heavy cream and really leaned into all the Eastern European vibes in this recipe. Warm and cozy. Recipe from #
