my favorite way to eat a breakfast taco

Breakfast is extremely important to us here at Crunchy Radish. I often find myself contemplating what I will have for brekky the night before. A nutritious breakfast provides an exponential amount of benefits including much needed fuel for the morning. Breakfast prevents overeating at lunch, helps avoid poor food choices out of hunger, improves mood, and assists with weight maintenance and weight loss. Still not a convert? Try out my favorite way to eat a breakfast taco loaded with fiber, complex carbohydrates, protein, and a hearty dose of greens.

Serves 1

  • 1 organic corn tortilla, toasted
  • 1/4 cup sodium-free black beans
  • 1 tsp cumin
  • 2 eggs (1 whole, 1 whites only)
  • 1  1/2 cups organic spinach or baby kale
  • 2 tsps coconut oil or cold pressed olive oil
  • 2 small cherry tomatoes sliced
  • 2 thin slices of avocado
  • Hot sauce for garnish

In a bowl, whisk together the eggs and set aside. Warm the black beans and cumin in a small sauce pan over low heat. While the beans warm, heat 1 tsp vegetable oil in a pan and sautè the greens until slightly wilted. Place greens aside and wipe pan dry. Over medium low heat, add the remaining tsp of vegetable oil to the pan. Add the eggs and lightly scramble until cooked. Place the toasted tortilla on a plate, layer with beans, greens, eggs, tomato, and avocado. Finish with hot sauce for an added kick.

It’s not vacation, it’s a trip! So much caffeine, so many tomatoes,  so many smiles (and some tears- mainly from me) and a lot of happy memories.

Good day for dilly bean stew with cabbage and frizzled onions. Love this vinegary, buttery, creamy combo. Used limas cooked from dried and it was extra extra. Recipe from @alisoneroman stay cozy friends.
Hitting all the right spots on a cold snowy day. @jj__mc mushroom and wild rice soup with potatoes and dill. Swapped sour cream in place of heavy cream and really leaned into all the Eastern European vibes in this recipe. Warm and cozy. Recipe from #
