The Easiest and Healthiest Chocolate Mousse You Will Ever Make

Chocolate junkie? Looking for a dessert that tastes rich and creamy without the added guilt? Try this vegan, gluten-free, dairy-free, and refined sugar-free dessert that will be sure to impress any health food skeptic. 

Avocado Mousse with Spicy Nut Bits

Chocolate Avocado Mousse

4 servings

  • 2 ripe avocados

  • 2 tbsps unsweetened cacao powder

  • 2 tbsps cold coffee

  • 2 tbsps pure maple syrup

  • ½ tsp vanilla extract

Combine all ingredients in a food processor until well blended. Transfer to a bowl, cover, and chill for at least two hours. Serve with spicy nut bits on top.

Spicy Nut Bits

  • 1 cup sesame seeds

  • ½ cup walnuts

  • ½ cup cashews

  • 2 tbsps coconut oil, melted

  • 2 tbsps pure maple syrup

  • 1/2 tsp cayenne pepper

  • 1 tsp cinnamon

  • ½ teaspoon sea salt

Pulse walnuts and cashews in a food processor until coarsely broken into small bits. Set aside in a mixing bowl. 

In a large mixing bowl, mix coconut oil, maple syrup, cinnamon, cayenne pepper, and salt. Combine the nut mixture into the maple syrup mixture and stir in sesame seeds. Spread out mixture on a parchment paper lined sheet pan.

Bake at 300 degrees for 10 minutes. Check bits frequently and stir to prevent burning.

Once toasted, set nuts and seeds aside to cool for at least 20 minutes.

Once cooled, break apart into bits with the back of a spoon.  Sprinkle on top of mousse and store the remaining bits in an airtight container.

 

What's so impressive about this nourishing vegan treat? It is loaded with healthy fats, protein, and fiber from the avocado and nuts. Magnesium and iron from the cacao. Try getting those boosts from your average pudding.
