A few weeks ago I was dining with two super inspiring vegheads, Ali of Inspiralized and Alyssa of Simply Quinoa at the vegcentric restaurant, ABCV. We noshed on many tasty dishes, but avocado lettuce cups with roasted carrots was a standout. It also seemed like the most adaptable to make at home. Spicy carrots with crunchy vegetables and creamy tahini all wrapped up in a lettuce cup is a simple way to continue resetting for summer.

My husband and I just returned from a week's trip to Montana where we explored Glacier National Park followed by more hiking, some archery, and relaxation at a ranch for a few days. It was glorious. After travel, my body always craves tons of crunchy greens and smoothies to get back on track. Although I try and eat as healthy as possible on vacation, I certainly make room for indulgences. To help reset this week, I am starting my mornings with fully loaded smoothies that are packed with antioxidants, immune boosters, and, of course, lots of greens.

Making pizza at home has always been a little bit of a challenge to me, something that I'm typically hesitant to undertake after a long day or at any time in a small New York City kitchen. (This is a little at odds with the fact that I’m a huge pizza lover.) In general, this is because when I cook at home, I focus on limited prep, short cooking times, and going mostly gluten-free —plus, I always want vegetables to take a prominent role in what I’m eating. (I also like to keep my ingredient list limited and clean-up minimal, but don't we all?)
