comforting cold noodles

Lots of people are cold noodle fans. It’s delicious, satisfying, and a staple in Asian take-out. What’s not to love about this classic dish is that it’s often made with rice or Chinese egg noodles doused in a sauce heavy on the sugar, MSG, and sodium. This version switches things up with noodles made from brown rice or buckwheat, both gluten-free options. In additional to the noodles, crunchy cabbage, carrots, peppers, and cucumber are tossed in for added nutritional mileage, color, and palate diversity. The sauce is a blend of peanut butter, tahini, tamari, ginger, garlic, and lots of fresh lime juice. It is lightly sweetened with a touch of maple syrup, which can easily be omitted, if you wish. Crunchy peanuts, scallions, avocado, and a scattering of gomasio finish this dish with a nice contrast of textures and flavors.

I had the opportunity to meet Phoebe Lapine of Feed Me Phoebe a year ago at a wellness gathering and have been enamored ever since. Not only are we both native New Yorkers navigating the wellness world, we both have a firm belief in living a life of balance without tipping the scales of the extreme. Phoebe coined the term healthy hedonist, which is all about taking small steps to live your best life while also properly nourishing your body. I am so excited to share a recipe from Phoebe's memoir, The Wellness Project, which comes out this week!

Arame + Ginger Soba Noodle Stir-fry

When I am craving something light and fortifying, a simple stir-fry is typically the answer. Stir-fry's are the ideal way to use up some of those leftover vegetables in the fridge as well as get a meal on the table in a short amount of time. I like to keep my stir-fry's simple, uncomplicated, and adaptable to what I have on hand. Ginger and garlic always serve as the base and I build each layer with whatever vegetables happen to lurking in my produce drawer. To add flavor, I lean on sesame oil, tamari, and umeboshi vinegar, to create the perfect balance of salty, savory, and acidic.

Now that snow has finally fallen here on the East Coast, a warm and nourishing bowl of soba is the perfect antidote to a winter chill. Hearty mushrooms, fiber-rich soba, and ginger-filled miso broth make this dish a clean and simple winter standby.

It’s not vacation, it’s a trip! So much caffeine, so many tomatoes,  so many smiles (and some tears- mainly from me) and a lot of happy memories.

Hitting all the right spots on a cold snowy day. @jj__mc mushroom and wild rice soup with potatoes and dill. Swapped sour cream in place of heavy cream and really leaned into all the Eastern European vibes in this recipe. Warm and cozy. Recipe from #
