This recipe was initially featured on Refinery29, but I wanted it to find a home here, on The Crunchy Radish. Zesty, flavorful, and antioxidant- rich, this carrot ginger soup makes for a lovely light and nourishing "clean" meal. The topping of the poppers makes the soup more hearty and fills a void where heavy and calorically dense croutons or bread typically lie.

Egg-Centric

Eggs are having a moment. These protein-packed orbs are bursting with nutrients. Not only are they economical, they are effortless to prepare and can be utilized in numerous ways. Egg yolks have long suffered from a bad rap, blamed for being high in cholesterol and hazardous to one's health. The stance on egg yolks and their association with heart health has shifted. One yolk a day is fine for healthy individuals as long as the total cholesterol for the day does not exceed 300 mg.  One large egg yolk has 185 mg of cholesterol. No more than three yolks are recommended per week for people with heart disease and diabetes. The yolk is the only part of the egg that contains cholesterol.

A Very Veggie Sandwich

This very veg sandwich was featured on Refinery 29, but I thought that I would share it here as well. It is a tasty mid-day pick-me-up that leaves you energized and full without feeling weighed down and guilty. The extra carrot slaw is great left over and can be added to a salad or eaten alone.  Any remaining bean spread makes a perfect vehicle for your crudités. I am a real sucker for Eli’s health bread from Zabar’s, an Upper West Side institution, but any dense whole grain and seed bread should suffice.

Spring Clean-Up

We have finally emerged from the cold and tumultuous abyss of winter and for some, shedding the extra layer of clothing may reveal some additional lbs that were put on during the past frigid months. Spring is the perfect opportunity to assess your diet, clean-up, and get bathing suit ready. When cleaning up your diet, ideally you want to eliminate as much processed and refined products and foods as possible.

Are you or do you know someone who leads a vegetarian or vegan lifestyle ladened with processed soy-filled fake meat and imitation cheese products, french fries, potatoes, pasta, bread, and rice with little to no vegetables? Warning: You are doing you body more harm than good!

Tulum: Healthy Travel in the Riviera Maya

We recently had the opportunity to travel with friends to bohemian-esq Tulum. The trip was cathartic and tranquil. Although brief, we had the opportunity to eat incredibly fresh and flavorful food, take in some ruins, and revel in long and leisurely beach walks.

The list I am providing is by no means comprehensive, but just a simple reference of some tasty and healthy eats for travelers.

A Patty with Panache

I am constantly on the hunt for the perfect veggie burger. I've had multiple failed attempts in which the flavors are not right or the patties don't hold up. Through trial and error and my current obsession with sweet potatoes, the quinoa, kale, and sweet potato patty was born. The longer the patties have to chill, the better they hold up to searing. Alternatively, you could bake them, but they will likely dry out a bit. I served the patties in a lettuce wrap with sliced radish and a lemon yogurt sauce. If you want a vegan alternative, use tahini in place of yogurt for a nuttier diary-free sauce.

Grain Salad Goodness - Rainbow Black Rice

Rainbow black rice salad provides a welcome antioxidant and anti-inflammatory-rich meal during the dark and cold winter months. Black rice is fiber-rich and aids with digestion, satiation, and glycemic control. The pigmentation that causes the rice to be black is anthocyanin, an antioxidant also found in blackberries and blueberries. Additionally, black rice is shown to be cardio protective by assisting with lowering LDL (bad) cholesterol.

It’s not vacation, it’s a trip! So much caffeine, so many tomatoes,  so many smiles (and some tears- mainly from me) and a lot of happy memories.

Good day for dilly bean stew with cabbage and frizzled onions. Love this vinegary, buttery, creamy combo. Used limas cooked from dried and it was extra extra. Recipe from @alisoneroman stay cozy friends.
Hitting all the right spots on a cold snowy day. @jj__mc mushroom and wild rice soup with potatoes and dill. Swapped sour cream in place of heavy cream and really leaned into all the Eastern European vibes in this recipe. Warm and cozy. Recipe from #
