Egg yolks have long suffered from a bad rap, blamed for being high in cholesterol and hazardous to one's health. The stance on egg yolks and their association with heart health has shifted. One yolk a day is fine for healthy individuals as long as the total cholesterol for the day does not exceed 300 mg. One large egg yolk has 185 mg of cholesterol. No more than three yolks are recommended per week for people with heart disease and diabetes. The yolk is the only part of the egg that contains cholesterol.

It is a tasty mid-day pick-me-up that leaves you energized and full without feeling weighed down and guilty. The extra carrot slaw is great left over and can be added to a salad or eaten alone. I am a real sucker for Eli’s health bread from Zabar’s, an Upper West Side institution, but any dense whole grain and seed bread should suffice.

I am constantly on the hunt for the perfect veggie burger. I've had multiple failed attempts in which the flavors are not right or the patties don't hold up. Through trial and error and my current obsession with sweet potatoes, the quinoa, kale, and sweet potato patty was born. The longer the patties have to chill, the better they hold up to searing. Alternatively, you could bake them, but they will likely dry out a bit. I served the patties in a lettuce wrap with sliced radish and a lemon yogurt sauce. If you want a vegan alternative, use tahini in place of yogurt for a nuttier diary-free sauce.
