Super Simple Soup

Tomatoes can be fickle, sometimes emanating pure summer in a mouthful, while at other times promises of juiciness and the pristine balance of acid and sweet turn out to be mealy and bland.  A surefire way to elevate your tomato game is a slow and leisurely roast. Slow roasted tomatoes have endless possibilities- tossed with brown rice pasta, pureed into tomato sauce, submerged in a grain bowl, or blended for a simple and flavorful soup. Autumn Essentials

Autumn is my most favorite season of all. Chunky sweaters and boots replace denim shorts and bierks, warm spiced teas exchange hands with cold brew, and fall produce rich in winter squash, pears, apples, and sweet potatoes-show up in heaps at the local green market. I love the crisp air, fall foliage, and the tinglings of new beginnings.

Summer Soba Solution

Summery soba noodle bowls with raw and roasted seasonal vegetables is the ideal simple and satiating end-of-summer meal. For this bowl, I tossed broccoli with cayenne pepper and chili powder to create a spicy coating and roasted until tender and slightly crisp. Thinly shredded raw zucchini and squash paired nicely with brown rice and wakame soba. To bring all the ingredients together, a quick lime and herb laced ginger tahini sauce was the ideal dressing for this light and summery bowl.

Matcha Movement

Pop it Off

This recipe was initially featured on Refinery29, but I wanted it to find a home here, on The Crunchy Radish. Zesty, flavorful, and antioxidant- rich, this carrot ginger soup makes for a lovely light and nourishing "clean" meal. The topping of the poppers makes the soup more hearty and fills a void where heavy and calorically dense croutons or bread typically lie.

A Patty with Panache

I am constantly on the hunt for the perfect veggie burger. I've had multiple failed attempts in which the flavors are not right or the patties don't hold up. Through trial and error and my current obsession with sweet potatoes, the quinoa, kale, and sweet potato patty was born. The longer the patties have to chill, the better they hold up to searing. Alternatively, you could bake them, but they will likely dry out a bit. I served the patties in a lettuce wrap with sliced radish and a lemon yogurt sauce. If you want a vegan alternative, use tahini in place of yogurt for a nuttier diary-free sauce.

It’s not vacation, it’s a trip! So much caffeine, so many tomatoes,  so many smiles (and some tears- mainly from me) and a lot of happy memories.

Good day for dilly bean stew with cabbage and frizzled onions. Love this vinegary, buttery, creamy combo. Used limas cooked from dried and it was extra extra. Recipe from @alisoneroman stay cozy friends.
Hitting all the right spots on a cold snowy day. @jj__mc mushroom and wild rice soup with potatoes and dill. Swapped sour cream in place of heavy cream and really leaned into all the Eastern European vibes in this recipe. Warm and cozy. Recipe from #
