Skip the chips and opt for home-popped popcorn that tastes like nachos to satisfy that crunchy craving. Popcorn is loaded with beneficial fiber and is a whole grain that will allow you to feel satiated and keep you full.
Nacho Popcorn
- 2 tbsps un-popped popcorn kernels (Organic Non-GMO kernels are recommended. Two tbsps will equal 4 cups popped.)
- 1 tbsp coconut oil or butter
- 1/2 tbsp Parmesan cheese or nutritional yeast
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp cumin
- 1/8 tsp paprika
- 1/8 tsp chipotle powder
- 1/4 tsp salt
In a small bowl, mix together the cheese or nutritional yeast and spices. Place a large pot on medium heat with coconut oil or butter (enough to cover the bottom). Add a couple of kernels to test the temperature. Once they pop, add the rest of the kernels and lower the heat to medium low. Put on the lid and wait until kernels pop. Popcorn is ready when there is a 5 second lag between pops. Transfer hot popcorn to a large paper bag, immediately add spices, and vigorously shake bag to evenly coat the popcorn. (Alternatively, you can mix warm popcorn and spices in a bowl.) Transfer to a bowl and enjoy.
