Back when the quarantine first started and lengthy cooking projects were fun and a great use of time, a 20 minute recipe may not have been what you had in mind. But as the days and weeks continue to tick on, and cooking has become less and less novel - quick, easy and delicious may be more your forte. In this covid era of cooking, focusing on crowd pleasing easy to cook staples is becoming more and more essential. Enter this simple turkey bolognese - 20 minutes of active cooking time, hours of (optional, but recommended) inactive cooking time.

Eating with a plant-forward focus is my main food mission, and I try and slip in veggies at every meal and snack. Recently, my body has been craving more meat in my diet and, for me, that means integrating wild salmon, chicken, and turkey. When I do add these animal proteins into my meals, I always try and purchase the best option available, which means grass-fed, pasture-raised, hormone-free, and humanely raised products. These turkey taco bowls allow me to get my turkey fix, yet continue to place priority on fresh, nutrient-rich vegetables, whole grains, and legumes.

radish ready meal prep - turkey and kale meatballs + super green pesto

My husband is notoriously anti-freezer foods. He is also convinced that he will be willing and able to cook our meals in the early days of baby radish. I truly admire the sentiment and hope that it is true because he is a fantastic cook. But, just to play it safe and to prepare for days where we are just too tired or overwhelmed, I am meal prepping some freezer-friendly dinners. Today kicks off a mini-series on crunchy radish where I am sharing what I am meal prepping while we wait for our little friend's arrival. First up - turkey and kale meatballs and super green pesto.

It’s not vacation, it’s a trip! So much caffeine, so many tomatoes,  so many smiles (and some tears- mainly from me) and a lot of happy memories.

Good day for dilly bean stew with cabbage and frizzled onions. Love this vinegary, buttery, creamy combo. Used limas cooked from dried and it was extra extra. Recipe from @alisoneroman stay cozy friends.
Hitting all the right spots on a cold snowy day. @jj__mc mushroom and wild rice soup with potatoes and dill. Swapped sour cream in place of heavy cream and really leaned into all the Eastern European vibes in this recipe. Warm and cozy. Recipe from #
