sweet potato wedges with cilantro lime yogurt

Roasted sweet potatoes are in heavy rotation in our household. They are simple to make, loaded with Vitamins A and C, and are usually a favorite of Jack’s - albeit that is a moving target these days. To amp up the nutritional mileage and add some protein into the mix, I made a cool and zippy yogurt sauce that compliments the sweetness of the potatoes and creates a more balanced side dish or snack.

For an easy spice blend, I toss the sweet potatoes with Aleppo pepper (use paprika or cayenne as a substitute if you can not find Aleppo pepper), cinnamon, honey, salt, and pepper. This gives the potatoes a slightly sweet and warm component. For the yogurt, I use siggi’s plain yogurt and fold in lots of cilantro, grated garlic, cumin, white balsamic vinegar, and lime. Siggi’s is skyr, an Icelandic style yogurt which is thick and decadent with just the right amount of tartness. It is high in protein and has simple ingredients and no added sugar, making it my “go-to” yogurt. For the finishing touch, I top everything with crunchy slivered almonds. Pistachios would also work well here too.

sweet potatoes with cilantro lime yogurt

serves 4

  • 2 medium sized sweet potatoes, scrubbed and cut into wedges

  • 2 tablespoons olive oil

  • 1 tablespoon honey

  • 1 teaspoon Aleppo pepper

  • 1 teaspoon cinnamon

  • 1/8 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

  • 1 cup siggi’s plain yogurt

  • 1/2 teaspoon cumin

  • 1/2 cup cilantro chopped + additional for garnish

  • 1 clove garlic, minced or grated

  • 1 teaspoon white balsamic vinegar

  • 1/4 teaspoon lime zest

  • 1 teaspoon lime juice

  • 2 tablespoons toasted slivered almonds

  1. Preheat oven to 350 degrees. Line a sheet tray with parchment paper. Toss the sweet potato wedges with olive oil, honey, Aleppo, cinnamon, salt and pepper. Cook for 30 to 40 minutes until potatoes are slightly caramelized and tender.

  2. Mix together the yogurt, cumin, cilantro, garlic, vinegar, lime zest and juice, and a pinch of salt in a bowl. Taste and adjust seasoning, if needed.

  3. To serve, place yogurt in a shallow bowl, arrange potatoes on top, and scatter with cilantro and almonds. Alternatively serve yogurt on the side. Enjoy.

The Golden Door experience is completely tailored to each guest's needs, from dietary requests, spa treatments, and workouts - everyone's visit is 100% unique. The primary purpose of my stay was to improve upon my culinary skills and to learn new techniques around building flavor and texture using vegetable-forward ingredients without sacrificing the nutritional quality of the food. Although the main incentive of my visit was for the cooking school, that didn't mean that I couldn't indulge in all of the glory that the Golden Door has to offer.
