I will admit that I used to fall victim to those instant microwaveable sugar-laden packets of oats, where the oats have been cut and processed and lack much of the beneficial fiber, iron, and phosphorous. Steel cut and minimally processed oats are always best in order to retain much of the oat’s inherent benefits. To literally "spice" up my oats, I utilized seasonal apples and created a "crunchified" version of the instant apple cinnamon flavored packs.
Apple Cinnamon Oats
Serves 2 plus a little extra
Stewed Spiced Apples
- 2 organic apples, cut into bite sized cubes
- 1 tbsp freshly grated ginger
- 1 tsps cinnamon
- 1 tbsp pure grade A maple syrup
- Juice of half a lemon
1 cup steel cut oats
2 cups water
Optional Garnishes:
- Flax powder
- Chia seeds
- Hemp seeds
- Maca Powder
- Cacao nibs
- Raisins
- Gogi Berries
In a pot, cover apples with water and stir in cinnamon, ginger, maple syrup and lemon juice. Bring to a boil and let simmer until apples have softened - about10 minutes.
While the apples cook, bring 2 cups of water to a boil. Add oats and turn heat to low and allow oats to cook for 10 minutes. Turn off heat and cover oats for 2 minutes.
For 1 serving, place 1/2 the oats in bowl, top with 1/2 the stewed apples, a dash more cinnamon and desired garnishes.
