Are you looking for a new way to use your beet greens? How about turning them into chips? Don't just chop and chuck them - bake them! Beet green chips cook similarly to kale chips and can be dressed up with any of your favorite seasonings and spices. Beet greens are earthy and robust and full of Vitamins A, C, and K. So save your greens and turn them into chips!
- Pre-heat oven to 375 degrees.
- Wash beet greens and thoroughly dry them with a towel. Remove the thick stems from the greens.
- Lay the leaves out on a parchment paper-lined sheet tray and drizzle lightly with olive oil. Sprinkle with a pinch of salt and pepper and whichever other spices you decide to use - za'atar, garlic powder, cumin, or coriander to name a few. The options are endless. Gently message the olive oil and spices into the leaves and arrange evenly on the sheet tray.
- Bake for 10 minutes, flip the greens over, and bake for another 10 minutes more or until the beet greens are crisp. Enjoy immediately or store in an airtight container for two to three days.
