crunchy radish clean up: day 7

You made it to day seven. Congratulations! Hopefully you have noticed that eating cleanly and resetting your system does not have to boring, bland, or limiting. Making vegetables and whole grains the primary focus of your plate is a simple and incredibly nourishing way to lead a clean and a balanced diet. Day seven closes out with baked oatmeal, turmeric cauliflower and lentil salad, and carrot noodles with peanut sauce!

Baked Oatmeal Squares

Enjoy your leftover baked berry oatmeal from day five! Add a dollop of plain yogurt to switch it up a bit. 

Hard Boiled Egg

For a mid-morning snack, enjoy one pasture-raised hard boiled egg sprinkled with red chili pepper flakes and sea salt.

Turmeric Roasted Cauliflower + Lentil Salad

For lunch, enjoy this anti-inflammatory rich turmeric roasted cauliflower and lentil salad from day six.

Crackers + Avocado

For a snack, munch on 10 Mary's Gone Crackers with 2 tablespoons mashed avocado with lime juice and chili flakes.

Carrot Noodles + Peanut Sauce

Who needs take-out when you can make a creamy, dreamy, spicy peanut sauce at home?

Serves 2

  • 4 cups carrot noodles, spiralized or peeled using a julienne peeler
  • 1 1-inch piece ginger, peeled and chopped
  • 1 small garlic clove
  • 1/2 cup salt-free + sugar-free peanut butter
  • 2 tablespoons tamari
  • 2 tablespoons lime juice
  • 1/2 teaspoon red pepper flakes
  • 1/3 cup warm water
  • 1/4 cup cilantro, chopped
  • 4 tablespoons hemp seeds
  • 2 tablespoons salted peanuts, chopped

If you prefer the carrot noodles cooked, give them a quick blanch. If not, keep them raw. In a food processor, combine the ginger and garlic and pulse. Add the peanut butter, tamari, lime juice, red pepper flakes, and water, and blend until smooth. Add more water, a tablespoon at a time, if needed to thin. Taste, and adjust lime juice, peanut butter, or tamari, if needed. Toss carrot noodles with desired amount of peanut sauce, top with cilantro, hemp seeds, and peanuts, and enjoy.

Hitting all the right spots on a cold snowy day. @jj__mc mushroom and wild rice soup with potatoes and dill. Swapped sour cream in place of heavy cream and really leaned into all the Eastern European vibes in this recipe. Warm and cozy. Recipe from #
