Making pizza at home has always been a little bit of a challenge to me, something that I'm typically hesitant to undertake after a long day or at any time in a small New York City kitchen. (This is a little at odds with the fact that I’m a huge pizza lover.) In general, this is because when I cook at home, I focus on limited prep, short cooking times, and going mostly gluten-free —plus, I always want vegetables to take a prominent role in what I’m eating. (I also like to keep my ingredient list limited and clean-up minimal, but don't we all?)

With the arrival of spring weather comes the budding of life again at the greenmarkets and the desire to consume bright and vibrant food. This is not your typical decadent risotto. The cooking time is sliced in half, nutrient-rich brown rice replaces the typical white, and carrots and peas permeate this creamy, dreamy guilt-free meal.

Granola has become one of the many dishes that I batch cook on a Sunday and lean on for quick meal assembly throughout the week. Granola is one of those things that has healthy connotations but, more often then not, it is loaded with tons of sugar and other additives that tip its integrity from virtuous to vice. This goji granola, on the other hand, is full of clean protein from nuts and seeds, fiber from rolled oats, and antioxidants from the mighty goji berry.

When I am craving something light and fortifying, a simple stir-fry is typically the answer. Stir-fry's are the ideal way to use up some of those leftover vegetables in the fridge as well as get a meal on the table in a short amount of time. I like to keep my stir-fry's simple, uncomplicated, and adaptable to what I have on hand. Ginger and garlic always serve as the base and I build each layer with whatever vegetables happen to lurking in my produce drawer. To add flavor, I lean on sesame oil, tamari, and umeboshi vinegar, to create the perfect balance of salty, savory, and acidic.
