Sure, I've done a rigorous three years of graduate school, a stressful year of a dietetic internship, hours upon hours of dancing my way through college, and years of volunteering, but what have I not done yet? Culinary school!
I have partnered with the Natural Gourmet Institute, a renowned culinary school based in New York City which focuses on interdisciplinary health-centric culinary education. I will be enrolled in their two week basic cooking techniques intensive. I truly believe that it is essential to go back to the basics. During the two weeks, I will be learning "fundamental skills of healthful cooking, balanced menu planning, knife skills, the use of herbs and spices; cooking with whole grains and beans, fruits and vegetables, sea vegetables, tofu and tempeh, organic eggs and fish; fermentation, soups, salads and dressings, desserts, medicinal drinks; kitchen equipment and supplies; and methods for adapting traditional recipes to healthier ones."
